Etsuko Ichise is an expert Japanese chef who has published and contributed to hundreds of cookbooks. She also devotes herself to introducing children to the joys of cooking, and supervises the cooking for NHK Educational TV's Cooking Idol Ai! Mai! Main. Her publications include Bento: Lunches from Scratch, A Catalog of 300 Small Bento Side Dishes, Salad Lessons and The Book of Somen.
